This creamy lemon cake with lemon icing is the perfect treat this summer. Only takes about 40 minutes to make. The less time you bake it the creamier it will get. Ingredients
- 3 eggs
- 1¼ cup sugar
- 1¼ cup wheat flour
- 2 tsp baking soda
- 2 tsp vanilla sugar
- ¾ cup yogurt
- ½ cup rapeseed oil
- 1 lemon
- 1 cup icing sugar
How to
- Whisk the eggs and sugar together until a bit fluffy (2-5 min)
- Mix the flour, baking soda, and vanilla sugar together and add them to the batter.
- Add rapeseed oil and yogurt.
- Add lemon juice and the grated lemon peel.
- Bake for 30-40 minutes at 350 F. The longer you bake, the less creamy.
- Mix the icing sugar with a tbsp of lemon juice. Add some water if needed.
